Mark is a culinary maestro with over 26 years of classical training and expertise, honed through his culinary journey in exclusive hotels, leading restaurants, and even the Royal Navy.
Throughout his illustrious career, Mark had the privilege of delighting the palates of heads of state, a feat that filled him with immense pride.

With an affinity for the dessert section (probably because it was cooler than the others...), Mark decided to venture into the world of artisan chocolates in 2019, which he pursued with passion from his own kitchen.
Experimenting on friends and family, he discovered a magical blend of flavours and combinations that truly delighted their taste buds.

Mark's creations are not just indulgent treats but also captivating works of art, as he skillfully combines colors and flavors to evoke a multisensory experience.

To further enhance his skills, Mark completed the prestigious Barry Callebaut small business and Chocolatier course. His dedication and innovation were soon recognized when, in September 2020, his Peppermint Fondant and Old English Chewy Toffees earned him the prestigious Great Taste 2020 award. The accolades continued to pour in for Mark, with the Great Taste 2021 award being bestowed upon his Raspberry and Liquorice and Hot Honey chocolates, earning him well-deserved recognition for his commitment to excellence.
In September 2022, the crowning glory arrived when Mark's Espresso Caramel chocolate earned an extraordinary Great Taste 3 Star award, a testament to the exceptional quality and creativity that had become synonymous with his name.
Though he missed the Great Taste Golden Fork for the South East region in the same year, Mark's determination and dedication remain unshaken, and we know more awards will surely come in the future.
